My sister Marci and I have 2 things in common.  1) Our parents and 2) Our love for peaches.  Please welcome her and her pressure cooking skills back today, sharing this yummy Pressure Cooker Peach Compote, used for topping off desserts, warm breakfasts, smothered on yogurt, etc. – or simply stuffing in your face.  Then we’ll have a nice chat about what we don’t have in common, such as;  metabolisms, husbands, posterity likeness, personal interests and hobbies . . .

Life is made rich by moments that are rare.  First kiss, birth of a child, breathtaking sunrises and sunsets, a peaceful nap, and peaches.  Yes, peaches.  I love them so much I’m putting them on the same level as the birth of a child!  In my home, they are the number one fruit and for the very short time that they are in their prime, we eat them on everything!  Think yogurt, pancakes, salads, salsa or simply sliced up with a sprinkle of cinnamon, it doesn’t matter, they’ll be heavenly however you eat them.  However, I’ll admit, I seriously questioned my son dipping them in ketchup, but who knows, maybe he’s on to something.

My family recently bought a new home and while the house is in a beautiful location, it has 2 ovens (yay!), and has enough rooms for all my kids to have their own bedroom (twin boys in one room = disaster), the thing that sold me was 2 blooming peach trees!  So we negotiated…how much do you want, great take another ten grand, I don’t care, I just need those peach trees!  So I’m now the proud owner of peach trees!  Oh my, the possibilities!

Full Peach Flavor 

For this recipe I debated back and forth about dressing them up in cinnamon.  But after 2 batches of glistening orange peach compote, I knew this recipe was meant to be all about the peaches.  No sweetener, no spices, just let that peach flavor concentrate and shine with the magic of the pressure cooker!

The compote will thicken a bit as it cools, but since I like it best hot, I use a cornstarch slurry to thicken it up-completely optional.  Another option is to stir in a tablespoon of chia seeds while it’s hot and cover for 5 minutes.  This stores well in the fridge and it can also be frozen.  The texture of the peaches will be a bit different after freezing, but it’s still delicious.  Now go and enjoy the rich, rare moment that is peaches and eat some while watching a beautiful sunrise, because eating them while giving birth would be weird…amazing, but totally inappropriate.

How Do I Make the Peach Compote?

I LOVE my Fagor Lux and it’s a rare moment that it ever leaves my counter top. The Fagor Lux is very user friendly, beautiful (we especially love the white one), and includes functions such as brown, simmer, saute, slow cook, pressure cook and steam.  It also comes with presets for white rice, brown rice, and risotto.  There’s an option to delay cooking time for up to 6 hours and after your food is cooked it will keep it warm for up to 12 hours, if needed.

Slow Cooker & Pressure Cooker Options 

Which brings me to my next point to emphasize, the Fagor Lux can function as a slow cooker and/or pressure cooker, which could essentially replace the need to store extra appliances such as rice cookers or crock pots in the kitchen.

Last but not least, one of my favorite functions of all is for yogurt.  Rich, creamy, smooth yogurt that doesn’t require much more than stirring and pressing a button.  Using a gallon of milk, I get over 3 quarts of yogurt with this amazing appliance, but that’s for another post, another day.

Type of Peaches to Use for Peach Compote

There are many different types of peaches that can be used for peach compote, but the most popular type is the yellow peach. Other types of peaches that can be used include white peaches, donut peaches, and nectarine.

When choosing peaches for your compote, make sure to select ones that are ripe but not too soft. If the peach is too soft, it will turn to mush when cooked and will not hold its shape. You also want to avoid peaches that are overripe as they will be difficult to cook evenly.

Topping Ideas for Peach Compote Recipe

There are many different ways that you can top your peach compote. Some popular options include whipped cream, ice cream, yogurt, and granola.

If you are looking for a healthy option, you can also top your compote with fruits and nuts. This will add some extra antioxidants, vitamins, and minerals to your dish.

Pressure Cooker Peach Compote

Enjoy this peach compote over desserts, warm breakfasts, in yogurt, or simply by the spoonfuls.

Ingredients

  • 4 peaches peeled and chopped (about 4 cups)
  • 1 tbsp water
  • 1 tsp vanilla
  • 1/2 tbsp cornstarch
  • 1 tbsp water

Instructions

  • Add peaches, water, and vanilla to the pot of the pressure cooker. Secure the lid and turn pressure release knob to a sealed position. Cook at high pressure for 1 minute.
  • When cooking is complete, use a natural release for 5 minutes and then release any remaining pressure.
  • To thicken, stir together cornstarch and water in a small bowl. Select saute to bring peaches to a simmer. Pour cornstarch mixture into peaches and whisk continuously until thick, about 1 minute.
  • Use immediately or cool and store in a sealed container in the fridge for up to a week.

  1. Can you use frozen peaches in this compote? Would I follow the directions as written or would I have to adjust the cooking time? Also would i have to defrost the peaches before making the compote?

    1. Rose, you should just be able to throw them in frozen and follow the same directions. I do it with frozen cherries and blueberries often. Enjoy!

  5. I am excited to try making my own yogurt again! I remember a few years ago watching a youtube movie about how to make your own yogurt with a crock-pot. I was so excited to try it…. ok, what a waste of time and resources! my “yogurt” was burned around the edges, even though i used the low setting and followed the instructions exactly and wrapped up the crockpot into a thick blanket to retain the heat. I just had to dump it all out. I wouldn’t even dare taste it! I can’t wait to try your recipes and ideas.

  6. I own a reallt large (21 qt ?) Canning pressure cooker to bottle chocken, green beans, etc. But my sister told me how much she loved her electronic one for everyday use. I searched online, but decided on an 8 qt stove top pressure cooker for larger capaticty because of my large family. Well, i think i have only used it 2 or 3 times in a year because it scares me a little bit and because of the size, it takes a long time for the pressure to build up, so it doesn’t seem to save me the time I had hoped it would. I would LOVE an electronic one now, because I could set it to cook the potaoes (or rice, or beef or whatever) while I am at work, church or just going about my day and not worry about it blowing up or anything. I was concerned that programming would be complicated, but others have told me it’s not. Thank you for sharing such great ideas!

  21. Recently retired and living off the grid. Would love to try my hand at cooking with an electric pressure cooker. As a child I remember the fear I felt holding my mother’s pressure cooker under running water until the bobber stopped & the pressure was equal inside & out. So glad to know the cooker has been revolutionized! I only cook on a wood stove during the winter months so this would surely make life easier year round! We also use only solar power for all our electric needs.

    I have never used a pressure cooker before to cook my families meals and I feel as though I may have been missing out. I cook for 9 every night for dinner. Not only my family with 4 very impatient food critics but also for my parents and grandfather.   47. I had the “old fashioned ” pressure cooker when I first got married 42 years ago. We used it all the time and loved it. I was getting tired of trying to find the rubber gasket when my old one would get stretched out. I used it less and less until I just got rid of it! I have never had a pressure cooker in my life, I did have a boyfriend once who’s Mom had one of the old ones that lets the steam out of the top and she cooked all sorts in it including beer would you believe. I have heard about this on from a person running a Non for Profit organization to produce Great Dane Service Dogs for people with Mobility and balance problems and she feeds a gazillion people every day, I would love to have one of these as an addition to my slow cooker and make some of the things she does as they always look yummy.     As for the peach compote recipe (which sounds heavenly), it does’t say, but I assume you peel and de-stone the peaches first. Doesn’t that increase the prep time?

    1. Sorry, While I’m not new to the kitchen and using the pressure cooker, writing recipes is still a bit new for me. To get 4 cups of peaches, I peeled and chopped about 4 peaches, which I can do pretty quickly. I’ll fix that since a couple people have commented about that. Thanks!

    Mine is old gold, old and has a rubber replaceable gasket in the lid and the rocker on top.

    I have a question about the recipe though. I’ve been using stove top pressure cookers for years. I always thought that you need a minimum of water in order to produce steam, which in turn builds up pressure.

    I would be afraid that the peaches would burn with only a tablespoon of water. Unless I’m misunderstanding the recipe…

    1. That’s true, typically you need a minimum of 1 cup of liquid. As I was playing around with this recipe, 1 cup was obviously way too much liquid to make a good compote and it watered down the peaches so much that I had to add sugar to have any flavor. As the peaches warm up, they lend a lot of juice and that allows the cooker to pressurize. I’ve made this in 2 different cookers, and 3 different pot inserts and it’s worked every time.

  90. You had me at “presets for white rice, brown rice, and risotto. There’s an option to delay cook time for up to 6 hours and after your food is cooked it will keep it warm up to 12 hours, if needed. ”
    My sweetie and I have just recently retired, and we travel in a 30′ Arctic Fox trailer with 2 mini-doxies. With just us and 2 tiny dogs, its a housefull. A multi-use cooker like the Fagor would be perfect. Before I had 2 crock pots and 2 pressure cookers (used on the stove). Every space (and weight) is crucial in a trailer, dropping down to the Fagor and maybe a cast iron pan would be a miracle !

  91. Pressure cooking was a GAME CHANGER for me! I have a lot to learn still, for example…how to time the meat so it’s tender. 😉 But sooo many things are falling into place. It was worth every dime, and I keep wishing I had two because it’s a bummer to make part of the meal the ‘old’ way. 😉

    1. Mary, I agree that 2 pressure cookers becomes a must the more you use them. I’ve even pulled out my old, 3rd one a time or 2. My husband just smiles and rolls his eyes when he sees 3 pressure cookers scattered about the kitchen. Meat is tricky, Googling for a recipe will show 20 different recipes with 20 different methods just for a chuck roast! I’ve narrowed down my times that I like, but I’m a firm believer that the quality of meat makes a big difference. I do all my meat shopping at a specific store and it’s given me much better results.

  103. I don’t have a pressure cooker, but I’d love to get one to cook beans. I know it sounds silly, but home cooked beans are so much tastier than what comes out of the can. I have the best black bean recipe ever, but it takes a lot of time and energy to make. I know pressure cooking would make it so much easier.

  111. I can remember hearing the gentle rocking from my Grandma’s and Mom’s pressure cooker and anticipatin a very yummy Potro asthma for dinner! I love the way all meat I cook in a pressure cooker comes out moist and juicy. There have been times, unfortunately, that I did not add enough liquid or kept it cooking too long and boy what a mess. Something with a timer would be perfect! I am starting to cook my meat for weekly meals ahead of time again and the Fagor Lux would make a great addition to my cooking skills. 😉

    Being an Indian pressure cooker ( read stove top) has always been part of our kitchen. In fact I have multiple in different sizes: from tiny one for baby food for big one for parties.
    I love cooking in pressure cooker but hate that I have to baby sit them. Few months ago I forgot that I have potatoes in the cooker on slow flame. I went to parent meeting my daughter. Luckily it’s not far. So I rushed back home before the disaster stuck.
    Since then I wish I had q pressure cooker that I don’t have to babysit.

My Mother In Law used to help me can and pickle because I was too afraid to do it By myself even though I had confidence in all areas of cooking.   126. I used to have an old stove top pressure handed down to me by my aunt. Unfortunately it got lost in a cross-country move. I could not live without a pressure cooker so purchased an electric cooker. I use my pressure cooker several times a week (often every day) as I cook for my family and for my dogs who eat homemade food rather than kibble.   158. Here is my peach story. In the 70’s I had a peach tree and it was heaven. On Sunday mornings when peaches were ripe I would cut a peach into a champagne glass and cover with ice cold vouvray. Fast forward 40 years and I am now sharing a yard with lots of wild life….that translates to “the deer, raccoons and rabbits eat most of everything”.
    This spring I found a patio peach tree and was thrilled. Nursed along that tree with 5 peaches on the deck and last Friday was the picking day. I was concerned with raccoons so I wrapped the tree in netting so my peaches were safe. Friday morning I woke up knowing I could pick my peaches and found the raccoon had beat me to them. He ate the peaches thru the netting and broke antique plant pots in the process. Those damn raccoons got me. Next year I will build a cage for my peach tree so the raccoons can’ even touch them, those pesky critters!

    1. I had a similar experience with my cherry tree this year! My tree had 100’s of beautiful cherries and the morning I went to pick them, every single cherry was gone because of birds!

    1. Lynne, I guess with 3 kids (which include 2 crazy twin boys), I’ve become a master peach chopper 🙂 I use a peeler to take the skin off, remove the stone and chop it up!

Unfortunately, it has been packed for the last two years because we moved into our unfinished house with a makeshift kitchen and decided that the slow cooker is the only appliance we have room for at this time. The new multi purpose pressure cooker would replace the slow cooker and I would have the convenience of the pressure cooker that is currently packed. My husband being a long haul truck driver and I make his meals for him to take with him so he doesn’t have to eat in restaurants and I can make so many healthy meals in such a short time. Gone are the days of spending an entire weekend over the stove to prepare for the next week.

It’s a beautiful cooker and has lasted through many a meal and pot of soup or beans, but oh, the endless possibilities with an electric pressure cooker that does everything but windows! Yes, please!

  178. I love my pressure cooker for quickly cooking really tender chicken when i haven’t allowed enough time before dinner to cook it any other way. I too was terrified of my moms old pressure cooker with the jiggly steamy thing on top! My newer one is much easier to use but not nearly as nice as this beautiful fagor one and this one does so much more! Jealous of the peach trees!

  189. My mother has a pressure cooker and she’s “allowed” me to borrow it, lol. I’m a stay at home mom to three little ones, twin boys who are almost 5 and a little girl who is almost 3. When I’ve gotten the chance to use it, it’s saved me so much time cooking. The kids don’t “allow” me much time to prep before they get antsy they mommy is doing something else other than being with them. So this would be an amazing gift. Thank you for the opportunity.

(Insert laughter) Your recipe looks like one my mother used to make. I love the option of using Chia seeds as a thickener, since my little one is severely allergic to corn starch.     I do have a pressure cooker. It was my grandmother’s, and is about50 years old. It has a metal piece that sits on top where steam comes out. Above that I have no idea how to use it. It’s scary!!

    1. Oh Nicky. That 50 year old pressure cooker is NOTHING like the new electric pressure cookers! I have one like that too, actually – I need to just part with because it is covered in dust. I never used it because I would have visions of exploded mashed potatoes all over the kitchen, just like what happened in my childhood to my mother. Ya – no thanks! These are totally safe and can double as slow cookers, rice cookers, yogurt makers, steam, saute . . . I could go on.
