When I tell you to throw in frozen cauliflower – just do it! Fall flavors blend together in this delicious and nutritious pumpkin smoothie – or throw it in a bowl with toppings to make it even better!
To say that I am obsessed with smoothie bowls would be an understatement. They are so easy, convenient, packed with nutrition, and so very yummy. How easy are smoothie bowls? You can just toss in whatever fruits and veggies you happen to have on hand. Easy, peasy.
Smoothie bowls can be like a grown-up version of cereal. You can top them with granola, cacao nibs, honey, and whatever else floats your boat that day. The best part is you can make them personal, and change the flavors as you go.
Even though fall is here, there’s no reason to give up smoothie bowls. You are going to love this full flavored, fall delight, a pumpkin spice smoothie bowl. It’s refreshing but not freezing, comforting and full of nutrition. All without the guilt of high calories.
This pumpkin spice smoothie bowl is a hit in my family, and it’s sure to be a winner with yours as well.
My kids gobble it up. My hubs gobbles it up. And I make it for myself when they are all gone so I can gobble it up.
Now YOU have the recipe and can whip it up and gobble it up for yourself!
INGREDIENTS FOR PUMPKIN SMOOTHIE BOWL
The ingredients are real food ingredients, and can definitely be substituted for your own nutritional needs, such as dairy free. The best part is you can also “hide” veggies in there, so even the pickiest eaters will gobble them down.
- Pure Pumpkin Puree (not pumpkin pie filling)
- Almond milk (makes it low cal and super creamy)
- Yogurt (can use dairy free options or my sister says cashews will work in their place)
- Cinnamon or Pumpkin Pie Spice or both!
- Splash of Vanilla Extract
- Frozen banana
- Pure Maple Syrup if you need it a bit sweeter
- FROZEN CAULIFLOWER! (Yes! Let’s chat about that!)
- Toppings! Go crazy, but I have some suggestions in the recipe card.
FROZEN CAULIFLOWER IN SMOOTHIES
You may think I am joking when I tell you to toss in frozen cauliflower to this smoothie, but it blends up so nicely and creates such a creamy base. There is tons of nutrition, and no watering down of your smoothie bowl like could happen with ice.
The flavor is rather mild, and in many cases, you may not even be able to detect cauliflower at all. This may be from the blanching process in the frozen florets. It creates a milder flavor, and the pumpkin and spices outshine the cauliflower. All you are left with is handy nutrition.
