When I tell you to throw in frozen cauliflower – just do it!  Fall flavors blend together in this delicious and nutritious pumpkin smoothie – or throw it in a bowl with toppings to make it even better!

To say I am obsessed with smoothie bowls, would be an understatement. I eat them EVERY. SINGLE. DAY. At least during this RV living stage of my life I do.

They are convenient, I can pack in the nutrition, and they taste oh-so-very yummy!

I’ll either whip up a smoothie from Daily Harvest, which is convenient nutrition at it’s finest (go for the mint cacao one – to die for!) or I toss in whatever fruits and veggies I have on hand.

Even though Summer is over, I find myself still craving smoothie bowls. I consider them my grown-up bowl of cereal, where I top my smoothie with granola, cacao nibs, a drizzle of honey, and whatever else floats my boat at the moment.

I don’t want to give up this delight, even though Fall is in my midst, so I played around and came up with a smoothie bowl that encompasses my favorite Fall flavors. Mostly pumpkin and pumpkin pie spice. mmmmmm.

This smoothie is refreshing without being freezing. It’s comforting without the high calories. It’s full of nutrition without being flavorless.

My kids gobble it up. My hubs gobbles it up. And I make it for myself when they are all gone so I can gobble it up.

Now YOU have the recipe and can whip it up and gobble it up for yourself!

INGREDIENTS FOR PUMPKIN SMOOTHIE BOWL

The ingredients are real food ingredients, and can definitely be substituted for your own nutritional needs, such as dairy free.

I about cry when I see my veggie hating son eat this up, because I’m so happy he is eating veggies! Check out the goodness in this pumpkin smoothie.

  • Pure Pumpkin Puree (not pumpkin pie filling)
  • Almond milk (makes it low cal and super creamy)
  • Yogurt (can use dairy free options or my sister says cashews will work in their place)
  • Cinnamon or Pumpkin Pie Spice or both!
  • Splash of Vanilla Extract
  • Frozen banana
  • Pure Maple Syrup if you need it a bit sweeter
  • FROZEN CAULIFLOWER! (Yes! Let’s chat about that!)
  • Toppings! Go crazy, but I have some suggestions in the recipe card.

FROZEN CAULIFLOWER IN SMOOTHIES

I thought my foodie sister Marci from the food side of TIDBITS was joking when she told me to throw in frozen cauliflower in this smoothie. It is not exactly a Fall food in my book.

However, cauliflower blends up so nice to help create a creamy base, adds more nutrition and when frozen takes the place of ice without watering down the flavor.

In case you are wondering about the flavor like I was, I couldn’t sense a bit of cauliflower flavor. When you buy the frozen florets, I believe their flavor from the blanching process is already more mild then fresh cauliflower, plus with the pumpkin and spices in there – you are just left to dream about all things Fall.

Ingredients

Scale

SMOOTHIE

1 cup Almond Milk

1/2 cup plain yogurt or dairy free yogurt

1/2 cup pumpkin puree

1 frozen banana

1/2 cup frozen cauliflower

1/2 teaspoon pumpkin pie spice

1 Tablespoon pure maple syrup (totally optional)

Splash of vanilla extract

TOPPINGS

granola

slice almonds

cacao nibs

drizzle of honey

dash of cinnamon

Instructions

Combine all smoothie ingredients into a blender.

Blend at high speed until smooth and creamy.

Pour smoothie into a bowl or a cup and top with desired toppings.

Eat up!  Could it get any easier than that?!
