Today’s project is a little something to help you welcome the season. It’s a spring simmer pot recipe, similar to the fall simmer pot and this Christmas simmer pot I shared a while back.
Typically, we don’t think of potpourri or simmer pots this time of year, but it is still chilly enough in the house to enjoy a little steam from a simmer pot, and there are so many good smells we can add – right from our emerging gardens.
It’s simple and full of fresh ingredients that you can gather and begin enjoying in minutes.

What is a Simmer Pot
Simmer pots, also known as stovetop potpourri, are typically combinations of water, fruit, herbs, spices and other fragrant ingredients that are simmered together on the stove top or in a slow cooker. As the mixture simmers, it releases delicious fragrances into the air to make your home smell fabulous.

Ingredients and Supplies for a Spring Simmer Pot
You’re going to want a large pot or crock pot for heating and keeping your stovetop potpourri warm. You’ll also need a few simple ingredients.
Citrus Fruits
- 1-2 limes (cut in slices)
- 1 lemon (cut in slices)
Herb Ideas
- Peppermint
- Lemon Balm
- Lavender sprigs
- Rosemary sprigs
- Thyme (lemon thyme smells very nice)
I like harvesting sprigs of new herbs from my garden for this spring stovetop potpourri. Fresh is my favorite, but if you don’t have access to fresh herbs, try it out with some dry versions. It’ll still smell delightful!

How to Make and Use this Spring Simmer Pot Recipe
- Fill a large pot or slow cooker with water.
- Slice your fruit.
- Add the citrus slices and herbs to a large pot.
- Bring the pot to boil on the stove.
- Reduce to low heat and keep at a low simmer on the stove or in a slow cooker.
- Check the water level occasionally, adding more water as needed.
As long as you keep your water level high, you can enjoy hours of freshness!

Customize Your Spring Simmer Pot
Personally, I like to save orange slices for the holiday season, as that scent is so reminiscent for me. I find lemons and limes to be clean and fresh smelling – just like the spring and summer season. Feel free to experiment with whatever citrus you have to find your favorite combination.
Likewise, you can play around with the herbs. Use what you have on hand or try some new varieties. This recipe is very forgiving and designed to let you experiment.
A few fun ideas to customize your stovetop potpourri might be:
- Grapefruit (or any leftover citrus peels)
- Apple slices
- Mint
- Pine needles
- Vanilla extract
