Crescent rolls might be the cutest of all dinner rolls. I love seeing them on the dinner table! Their curled crescent shape is adorable, they feel fancy, and they’re super delicious to eat. What more could you ask for??
Now, imagine adding the goodness of freshly milled whole grains to those already delightful rolls. The flavor, nutrition and texture of your homemade crescent rolls suddenly becomes unbeatable! Trust me, homemade rolls are great, but homemade rolls made from scratch with fresh milled flour? That is out-of-this-world good!!

Why Freshly Milled Flour?
I love freshly milling my own flour from wheat berries. I blab on and on about the benefits of freshly milled flour here.
In a nutshell: you get the best nutrition and flavor within the first hours and days after milling your grains. You also get to customize your flour texture and grain blends while saving money. Plus it’s an easy-peasy process that takes very little time!
Crescent Rolls VS Croissants
Don’t confuse crescent rolls with croissants. They both have rolled-shapes, but the process for making crescent rolls is more similar to bread making. The texture of crescent rolls is also more like that of a fluffy dinner roll. They’re basically bread in a fancy shape.

Think of a croissant as having a pastry-like texture with flaky layers that are achieved by laminating layers of dough with butter. They are oh-so-good, but more complex to make. Today is all about simple bread-based crescent rolls made with basic ingredients. Comfort food at it’s finest!
Crescent Roll Recipe Supplies and Ingredients
Supplies
- A stand mixer and a dough hook or a large mixing bowl and mixing spoon
- Rolling pin
- Pizza cutter
- Baking trays
Ingredients
- 3/4 cup warm water
- 1 cup warm milk
- 2 tablespoons active dry yeast
- 1/3 sugar or sucanat
- 2 large eggs
- 2 teaspoons salt
- 8 tablespoons (1 stick) softened butter, cubed
- 5-6 cups (650-750 grams) freshly milled flour
How to Make Crescent Rolls
Prep the Butter
Cut the butter into small cubes and set aside to come to room temperature. Do not melt.
Activating the Yeast
In a large bowl or the bowl of a stand mixer, add the warm water and milk, yeast, and sugar. Stir and let sit for 10 minutes to activate the yeast.
Making the Crescent Roll Dough
Add the eggs and salt and mix again. Add about half of the flour and half of the butter cubes. While mixing, add the remaining butter cubes and flour, until the dough starts to come together and pull away from the sides of the bowl. You want the dough to be a little sticky and shaggy.
Continue mixing/kneading until all the butter has incorporated and the dough becomes smooth and more manageable. This may take 10-15 minutes.
First Rise
Oil a bowl, roll your dough ball into the oil, and cover with plastic wrap, a reusable bowl cover or moist tea towel.
Let the dough rise or proof until doubled.
Shaping the Crescent Roll Dough
Prepare 2 large sheet pans by greasing them or laying down parchment paper.
Dump the crescent roll dough onto a lightly floured surface and split in half. Set one half aside, while you work on the other.
Form dough out into a circle shape and then roll it into a round disc shape, only about 1/4 inch think. Try to get it to 14″-16″ in diameter.

Using a pizza cutter, slice the circle into 12 triangles or wedges.
Roll each triangle up into a crescent shape, starting at the wide end and ending at the tip. Press the tip into the dough, seaming it closed.

Place each crescent onto your greased or parchment-lined baking sheet, several inches apart.
Proceed to do the same with the second half of the dough.
Second Rise
Cover each sheet pan, and let rise in a warm place until puffy and soft.
Baking Instructions
When almost done rising, preheat the oven to 350 degrees Fahrenheit. If desired, melt some butter and brush the melted butter over the top.
Bake rolls for 15-20 minutes until the edges begin to turn light golden brown. For more buttery rolls, brush the finished roll tops with more butter. (Which I highly recommend!)

Storing Leftover Crescent Rolls
I’ve never had extra crescent rolls, because they all get eaten in a flash. However, if you find yourself with leftovers, you can store the baked rolls in an airtight container on the counter for a few days, or freeze them for several months.
Serving Suggestions
I’m a big fan of a basic crescent roll, but you can get all sorts of fancy with mix-ins and toppings.

Try adding a few of your favorite herbs to the dough or sprinkling them on top of your buttered rolls before baking. For a sweet treat, sprinkle some cinnamon sugar over the soft dough before you roll each triangle up.
Get creative with your topping variations. Honey butter, jam, and cream cheese would all be delicious. And of course, you can make some darling finger sandwiches by slicing these babies in half and stuffing them with your favorite lunch meat and a little cheese.
