There’s nothing much better than sitting down to a warm bowl of nutritious, delicious soup after a long day.  My family loves soup and we happily eat it all year long.  Creamy chicken noodle soup cooked in the crockpot or in the pressure cooker is a family favorite.  And our Better Than Zupas Creamy Cauliflower Soup is always a hit. 

But lately?  Well, lately I’ve been dreaming of a rich and creamy, fork tender potato soup. Potatoes are always in abundance for us, since we live near Idaho and keep a fresh stock of potatoes year round.  I’ve been scouring the internet to find the best potato soup recipes on the web.  I can’t wait to share these amazing recipes with you.  Dinner is going to be great!

What Potatoes are Best to Use in Potato Soup?

Have you ever made a potato soup and not been happy with the finished texture?  Maybe you wanted it smooth, but found the end result too lumpy?  Or perhaps you were hoping for hearty chunks and ended up with mush instead?  Likely, you were using the wrong potato for your soup.

Potatoes contain different amounts of starch and moisture, depending on the variety.  We’ll take a quick look at the differences right now, but you can check out Better Homes and Gardens for more detailed information on the best potatoes for soup.   

Starchy potatoes

Starchy potatoes, those high in starch and low in moisture content, tend not to hold their shape very well after cooking.  Because of this, they make great candidates for creamy soups.  An example of starchy potatoes would be russets potatoes.

Waxy potatoes

Waxy potatoes have less starch and more moisture.  These potatoes hold their shape very well after cooking.  Therefore, they make great chunky soups with lots of texture.  Examples of waxy potatoes are round white potatoes and red potatoes.

All-purpose potatoes

All-purpose potatoes have medium levels of both starch and moisture.  When in doubt, you can always use an all-purpose potato.  They’re also a great choice when you want a chunky/creamy combination soup.  Examples of all-purpose potatoes are yellow or Yukon gold potatoes.

Thickening Potato Soup

Don’t worry if your potato soup recipe turns out to be thinner than you expected.  It’s easy to thicken potato soup! 

  • To begin, make a simple slurry with 1 part cornstarch (or flour, or arrowroot powder) and 2 parts water.
  • Next, whisk the cornstarch and water together and add slowly to your simmering soup, whisking while you pour.
  • Lastely, gently simmer the soup over medium heat until you reached your desired consistency. 

Alternately, if you have lots of chunks in your potato soup, you can mash or blend some of the chunks with a potato masher to thicken the liquid portion of your soup.

Thinning Potato Soup

Thinning Potato soup couldn’t be any easier! Simply add a small amount of milk, water or chicken broth. Stir into your soup until well combined.

Topping Ideas

Toppings make all the difference!  You can easily jazz up your soup with some of these flavorful additions.

  • Shredded cheddar cheese
  • Sliced green onions
  • Crushed crackers
  • Sour cream
  • Crispy bacon bits

Storing Potato Soup

You can store your leftover potato soup in the fridge.  Place the soup in an airtight container and refrigerate.  Be sure to use up your leftover soup within 3-4 days. 

How to Freeze Potato Soup

You can absolutely freeze potato soup, but freezing does change the texture of the soup.  You might find that the potatoes begin to break down and the soup might be mushier than it was before freezing.  However, if you still want to freeze your soup, just pour it into a freezer safe bag or container and label with the date.  Use your frozen soup within 6 months of the freezing date.

  1. I have a tip for learning more about homesteading. Look up an 1950-60 homestead couple Scott Nearing who homesteaded in Vermont. They published books on their life of independence. I think you will learn a ton on cold/short season gardens (food growing thru winter). Marvelous info so you don’t have to reinvent the wheel. Much love from a big fan, Ruth💕
