Full of flavor, depth and smelling like a million bucks. After trying this wassail combination, I knew that I had to get on here and share it with all of you!

What is Wassail Anyway?

Wassail is a delicious warm, spiced drink that’s usually made with apple cider, apple slices and orange slices. A traditional wassail recipe would have probably included something like ale, wine, rum or other alcohol, but today you’ll find many non-alcoholic versions of wassail as well.

Wassail is both a drink and a tradition, both of which date all the way back to Medieval times in England when people would brew wassail and then go wassailing – toasting and singing carols to ensure a good orchard harvest and good health for the next year.

Now, we mostly think of wassail as a tasty holiday drink that’s especially common around Christmas and New Year’s.

Even if you don’t have an orchard to toast, you can still enjoy a warm mug of this delightful drink on a chilly winter evening.

Different Ways to Make This Wassail Recipe

There are a few ways that you can make this wassail. Each serves a different purpose, but they all work great and taste terrific.

  1. In the Slow Cooker – If you want to pour it all in and forget it while it warms and blends the flavors, the slow cooker is perfect! It will take about 2 hours to be ready, but can sit all day for frequent serving. A warm or low setting will work great. Bonus: your house is going to smell amazing all day!
  2. On the Stove Top – A slow simmer on the stove top is a great way to have it ready faster and works much like potpourri for helping your home smell festive and delicious. A half an hour of simmering should do the trick, but longer is always better.
  3. In the Instant Pot – A pressure cooker makes easy, fast and light work of homemade wassail. Dump it all in and set your pressure cooker for 10 minutes. Flavors infuse fast in the Instant Pot! I even have a recipe from years past for this Instant Pot specific wassail recipe, if you want to check out another version. This recipe is also in our Instant Pot cookbook!

Storing and Reheating Wassail

If you have leftover wassail, you can store it in the refrigerator for 3-4 days.

To reheat your wassail, add some to a pot and gently warm it over medium low heat, stirring occasionally. Be careful not to boil your wassail, as this could affect the flavor.

Alternately, you can warm your wassail in the microwave. If you’re doing it this way, heat your wassail leftovers in small bursts and stir it often to avoid overheating and boiling.

Wassail Recipe Variations

I absolutely adore this wassail recipe just as it’s written, but if you have the urge, you can definitely change things up.

There are so many wassail variations out there. Some call for lemon juice, cranberry juice, allspice, star anise, brandy, bourbon….I could go on, but you get the point. Wassail is very adaptable, so feel free to experiment with your favorite flavors.
